I received a wonderful package of delicious food from Evette.

She dries veggies in her oven.  These were SO good!! I tried something new. I have never heard of taro before. I did some research and its a starchy vegetable. Sounds like a potato, no wonder I loved it!! I havent found any around here, but I will continue to look!!
Homemade cookies!! Peanut butter cookies with raspberry jam!!! I had one every day with my breakfast! They were delicious!

Granolda bar, HOT chocolate, (that bar seemed to find its way to my daughters room)

These crackers were wonderful. Great granola for after my runs! AND PB thins for a 100 calorie snack at work.  I was introduced to PB in last months box, and now to find out they make cookies. YUM!!!
Thank you Evette!! I was spoiled!!!
And I would love the recipe for the veggie chips and the cookies!!!

I sent my package to Freida at the Purple Oven Mitt.

Monday: Walk 5.5 miles,

Wednesday: Walk 4.5 miles,

This week our Challenge was to face head on one of our fears. Mine is the spin class. So far it doesnt fit into my schedule, BUT I did go into the spin room, sit on a bike for 10 mins.  OUCH!!!! Its gonna take abit to get used to those small seats!! I will take a class when it fits into my schedule!

Last week our Challege was to do or sign up to do a 5K. Julie  hosted a virtual 5K. I did that on Saturday last week at our Epilepsy Fun Run/Walk

This weeks challenge is Week 9 - (begin July 29) - NO SUGAR (unless it's all natural) AND NO SNACKING AFTER DINNER

For Deannas Me and You Getting Fit, we were to try a new recipe.
My daughter made spinach guacomole dip. She made it, made me try, and then told me what it was. It was ok. but..... I could do without.

We also experimented on canning salsa and beef stew.

I also made an egg in a mug in the microwave. I LOVE scrambled eggs, and just dont have time to make them in the morning. IT was ok, but will take a bit to get used to.

Julies Virtual

GRRR That fat roll!!!
Today was the Western PA Epilepsy Fun Run/Walk. My youngest son, Branden, created a team in honor of my daughter, Amber, who was diagnosed with Epilepsy in 1998. Branden will be a Junior in High School next year.  Before he graduates he has to do a community project, and then do a presention. So, he created a team, raised funds by selling Christmas cookies, having a yard sale, and mailing letters to local businesses.  Our team raised 710.00 for the Epilepsy Foundation.
I ran the 3 mile, my husband, Amber and Branden walked the two mile.  I was a little worried because I havent had a good run in two weeks. Ive been walking three times a week with my sister, and my running has taken the back burner. This race was not officially timed. There was a clock at the end of the race, but there are no posted times. Its a true FUN RUN.

It was .1 short!!! After I crossed the finish line, I walked to make it up
Mile one: 11.26
Mile two: 12:05
Mile Three: 11:29

I HAVE NEVER run a race and been under a 13!!!! I was so excited!!! This is the fasted I have ever run!!! My intervals are working!! Im getting faster!!!

Kick me!

The Voices Within and Searching for Fireflies both gave me much needed encouragement/kick in the butt,  this week!!!
The last two weeks have been exhausting. I would write a post, and then delete it. They all sounded whiny and complainy. One of my biggest pet peeves is whiners!! They are so high maintenance. I was sounding like what I despise.

The final kick in that pants came from the pulpit today.
Phillipians 2:14 Do everything without complaining or arguing.............. I believe this is in reference to the Children of Israel who were wandering the desert, BUT it also applies to ME!!!!
Matthew 5:14 You are the light of the world, a city on a hill can not be hidden. ................... People are watching me, and my reactions!

The past two 'whiney' weeks, bullet style
  • Coworker B was fired.
  • Coworker S was moved to another office.
  • Coworker A decided to go on vacation for 10 days.
  • Coworker C and I were left to do the job of 5 people.
  • Two secretaries left to answer 4 phone lines, causes grumpy patients.
  • I ate one dozen frosted pumpkin cookies within 48 hours.
  • I drank a case of diet coke in 10 days
  • I cried myself to sleep from pure exhaustion twice.
  • Part time jobs cannot wait even tho full times jobs take up more time.
The past two 'what I learned' weeks, bullet style
  • Getting up at 5AM to walk four times a week can get rid of lots of stress
  • Smiling even when you dont feel like it, makes life much easier.
  • Using please and thankyou really does go a long way
  • No matter how bad your day goes, it will end
  • You are stronger than you think
  • One dozen pumpkin cookies does not cure stress

Challenge starting weight: 181.3
Current weight:  182.8  up 1.5lbs

Last weeks challenge was to lose two pounds.  I did not lose the two pounds. At one point (after my pumpkin cookie fiasco) I was up to 189.
This weeks challenge was to go Vegetarian. I started researching Vegan, and I got REALLY scared!! Theres a lot of food that Vegans do not eat, that is not meat!!!! So I reread the challenge, and I realized that this challenge was geared towards not eating meat. I breathed a sigh of relief, bought extra veggies, and had a great week, eating wise.

THIS weeks challenge is to find a 5K and sign up.
Im going to use my Hershey Park half marathon. I dont have the extra money to sign up for something else right now. OR I could also use the Sweat Your Thorns Off Virtual 5K. IF anyone is looking for a 5K that is FREE!!!!! and you could win prizes, check out this one. You can walk, run, hop, skip, etc.....

For Deannas Me and You Getting Fit, I again failed to complete my recipe. Grilled Fruit.
This weeks Challenge is to eat some high fiber new to you recipes. This one is hard. When I increase my fiber, I have 'problems' on my runs. I have to make sure I have several bathrooms readily available!!!! For this challenge Im going to go with beans. I HATE beans!!!
AND I am also going to grill some fruit!! I will catch up with this challenge!!

Sunday: off
Monday: Walk 4 miles, abs
Tuesday: Body Pump
Wednesday: Walk 4 miles, abs
Thursday: off
Friday: Walk 4 miles, abs
Saturday: Walk 6.5 miles, Body Pump, Body Combat.

Recipe Challenge

Deanna from Me and You Getting Fit at Home is hosting a recipe challeng for July.   Check out her blog for amazing recipes for week one. Theme, Red White and Blue.

I am SO bad at being creative and coming up with recipes. I was hoping to be inspired!! I looked around my kitchen for red white and blue, and found nothing but frozen strawberries, and blueberries. (and food coloring)

I finally gave in, this is what I came up with.......

Every morning I have fresh carrot juice, with orange juice, grape juice, spinach or broccoli, and half a lemon.
Friday morning I grabbed the frozen strawberries and blueberries, and threw them in the mix. DELICIOUS!!!!

Virtual Run Recaps

Did the 5K Sunday, It was SO HUMID!!! We recently had a lot of rain and wind and hail. We didnt lose power, but the church I attend did. SO, with no power, no church service. Instead I went for a jog. The first mile was a 12.3 and for me thats awesome. I then did some walk jog intervals. The humidity made breathing really difficult.

A wonderful friend of mine told me about a trail she found at the end of town. So thats where I went this morning. ABSOLUTLEY love it!! I will be back. A bit scarey at some points. I could see where deer had been on the trail, and even a bear.

Theres a river down below the trail, and the sound was amazing. Someone still has their maple sugar lines up. I met some squirrels and a hoards of gnats. BUT, the beauty of nature won out over the muddy potholes, gnats, and weird creepy bugs.

When we were kids we used to pick Queen Annes Lace and put them in food coloring and watch then turn colors. I was so tempted to pick this one. BUT, it wouldnt have survived the mile home.

5K (mile one 12.3 PR for me) Total time: 47.55

10K Saturday, WOW is it ever hot!!!!!!!!11
I started outside, but had to move inside to the treadmill!! Did lots of walk breaks on this one.
